Packed plant-based burritos with walnut meat and Chizou Tex Mex

These plant-based burritos are packed with a super easy, crunchy walnut meat, Chizou Tex Mex, beans and guac. They're a treat to your taste buds and great for a comforting lunch or dinner.

For 4 burritos:

PLANT-BASED WALNUT MEAT

  • 1/2 cup raw walnuts, soaked in boiling water for about 10 minutes, then drained
  • 2 tablespoons olive oil
  • 3 cloves garlic, peeled and minced
  • 1/2 onion, diced
  • 1 can cooked black beans
  • 1/2 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 2 tablespoons soy sauce
  • 1/2 teaspoon liquid smoke (optional)
  • 1/2 teaspoon (smoked) paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon pepper

 

SEASONED RICE

  • 1 1/2 cups cooked brown rice
  • a sniff each of paprika, salt and pepper
  • 1/2 teaspoon tomato paste

 

VEGAN BURRITOS

  • 8 large burrito wraps
  • 1 cup mexican salsa
  • 1 cup guacamole, homemade or storebought
  • 1 1/2 cups Chizou Tex Mex
  • 2 cups lettuce, shredded
  • some hot sauce or diced jalapenos (if you like it spicy)
  • 1/2 cup plant-based sour cream or spicy plant-based mayo 

Directions:

PLANT-BASED WALNUT MEAT

  • Add the drained walnuts, 1 tablespoon of oil and the 2 tablespoons of water to a food processor and pulse about 10 to 20 times until it you have a kind of mince.
  • Add another tablespoon of oil to a pan and set on medium heat. Stir in the garlic and onion and saute for about 5 minutes or until the onion is a bit brown.
  • Now stir in the walnut 'meat', the soy sauce, paprika, cumin, chili powder, garlic powder, salt and pepper and the liquid smoke if you have it.
  • Next, stir in the black beans, and stir-fry for another 5 minutes or so.
  • Remove from heat and set aside for later.

 

SEASONED RICE

  • Add te rice to a bowl and stir in the tomato paste, paprika, salt and pepper.
  • Also set aside for now.

 

PLANT-BASED BURRITOS

  • Heat a pan over medium heat. Place a wrap in the pan for about 15 seconds or, microwave the wrap for about 15 seconds.
  • Divide the ingredients equally between your wraps and layer them:
  • Burritos 
  • Seasoned rice
  • Walnut meat
  • Lettuce
  • Chizou Tex Mex
  • Salsa
  • Guac
  • Hot Sauce/Jalapenos
  • Plant-based sour cream or spicy plant-based mayo
  • Place the ingredients in a line and wrap up
  • Heat the pan over medium heat and add some oil. Bake the burrito for about 2 to 3 minutes until the wrap is fully sealed and the burrito is golden brown. Flip, and repeat for the other side.
